Made the milkbar pumpkin caramel pie for thanksgiving and it was so good 🥧
The perfect bread for fall ✨
Ingredients
For the Apples:
- 1 and 1/2 cups (180g) peeled & chopped apples (1/2-inch chunks, about 2 medium apples)
- 1/3 cup (67g) packed light or dark brown sugar
- 1 and 1/2 teaspoons ground cinnamon
For the Batter:
- 1 and 3/4 cups (219g) all-purpose flour (spooned & leveled)
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup (115g) unsalted butter, softened
- 1/2 cup (100g) granulated sugar
- 2 large eggs
- 1/2 cup (120g) unsweetened applesauce
- 1 teaspoon vanilla extract
- 1/4 cup (60ml) milk
Directions
1. Preheat the Oven: Adjust the oven rack to the lower third position. Preheat to 350°F (177°C). Spray a 9×5-inch loaf pan with nonstick spray.
2. Prepare the Apples: In a small bowl, stir together the apples, brown sugar, and cinnamon. Set aside.
3. Make the Batter:
- In a large bowl, whisk together the flour, cinnamon, nutmeg, baking powder, baking soda, and salt.
- In another bowl, use a handheld or stand mixer to beat the butter and granulated sugar together on high speed until smooth and creamy (about 2 minutes).
- Add the eggs and beat on medium speed until combined. Scrape down the sides and bottom of the bowl as needed.
- Add the applesauce and vanilla extract. Mix on medium speed until combined (the mixture will look curdled, which is normal).
- Gradually add the dry ingredients to the wet ingredients. With the mixer on low, slowly pour in the milk. Beat just until combined—do not overmix. The batter will be thick and slightly sticky.
4. Assemble the Loaf:
- Pour and spread half of the batter into the prepared loaf pan.
- Evenly spoon the apples (with any leftover cinnamon-sugar juices) on top.
- Spread the remaining batter over the apples. Use a knife to swirl the batter down the center.
5. Bake:
- Bake for 60-75 minutes, loosely covering the top with aluminum foil after 30 minutes to prevent excessive browning.
- The bread is done when a toothpick inserted into the center comes out clean (begin checking at 60 minutes).
- Cool completely in the pan on a wire rack before slicing.
my fav chili recipe 🫶
Ingredients
1 Tbsp. neutral oil
1 medium yellow onion, chopped
1 jalapeño, seeded, finely chopped
2 cloves garlic, finely chopped
1 tsp. dried oregano
1 tsp. ground cumin
3 boneless, skinless chicken breasts, cut into thirds
5 c. low-sodium chicken broth
2 (4.5-oz.) cans green chiles
Kosher salt
Freshly ground black pepper
2 (15-oz.) cans white beans, drained, rinsed
1 1/2 c. frozen corn
1/2 c. sour cream
1/4 c. chopped fresh cilantro, for serving
1/4 c. shredded Monterey Jack, for serving
Directions
Step 1
In a large pot over medium heat, heat oil. Add onion and jalapeño and cook, stirring, until softened, about 8 minutes. Add garlic, oregano, and cumin and cook, stirring, until fragrant, about 1 minute. Add chicken, broth, and chiles; season with salt and pepper. Bring to a boil, then reduce heat and simmer, uncovered, until chicken is tender and cooked through, 10 to 12 minutes. Transfer chicken to a plate and shred with 2 forks.
Step 2
Add beans to pot and bring to a simmer. Cook, smashing about one-quarter of beans with a wooden spoon, until slightly thickened, about 10 minutes. Add corn and shredded chicken and cook, stirring, until heated through, about 1 minute more. Remove from heat and stir in sour cream.
Step 3
Ladle chili into bowls.
